45g of low gluten flour, 40g of butter powder, 5g of cocoa powder sifted, pour into 40g of butter, mix well

Flattened and chilled in the refrigerator for 1 hour, removed and pressed out the shape with a mold

Pour 100g of milk, 45g of butter, 2g of sugar into the milk pot and cook until boiling, sift in 55g of low gluten flour and 5g of cocoa powder and mix well

Turn off the heat, pour in the warm egg mixture in 3 batches and mix well

Pour into a laminating bag, squeeze out the shape of puffs, put the chocolate pastry on top and bake in the preheated oven at 180°C for 35 minutes

After baking, remove the puffs and squeeze in the light cream for the filling, the crispy puffs are finished
